Strawberry Crepes

This is my FAVORITE breakfast I like to make when strawberries are in season.

I like to top them with a little powdered sugar. And of course whipped cream if we have it, and hopefully we do. My kids liked to have powdered sugar AND syrup. YUMMMMMMY!

1 cup unbleached all-purpose flour

4 eggs

4 T butter, melted

1/2 t salt

1 3/4 milk (I use skim)

1 t butter

1.Combine the flour, eggs, melted butter, salt and milk in a blender and process until smooth. (the book says to chill for 30 min, but I never do....)

2. Heat a small nonstick skillet or omelette pan. Melt some of the butter in the pan, spread to cover.

3. Pour a little less than 1/4 cup of batter into the pan and quickly tip the pan, moving it in a circular fashion to evenly spread the batter over the bottom and sides. Cook over medium heat for about 2 min. Flip the crepe, continue cooking for 30 sec. Remove from pan and fill with cut up strawberries (top with powdered sugar, syrup, or whipped cream. Or all of them!). ENJOY!!!!!! Kids love these and they are really quick and easy to make. Fill with any seasonal fruit.
